Some of you might remember that I’m currently rocking a vegan diet; how’s it going, you ask? The short answer is: awesome. Aside from the fact that I’m spending rather a lot of money on groceries and rather a lot of time chopping things (seriously, vegetables are just not safe around me these days), I’ve been finding it easy and delicious, and I feel great.
Having said that, certain habits are hard to give up, and I put “deliciously creamy pasta dishes” in that category. Which is why I was so thrilled to discover this Creamy Avocado Pasta recipe from The Flourishing Foodie (who in turn adapted it from Oh She Glows) recently. It takes that beloved staple of the omnivorous diet and makes it vegan-friendly (though I’d wager not many omnivores would turn this down, either).
The post likens this quick and easy pasta sauce to an alfredo, but I’d call it closer to a pesto. At least that’s how you make it: all the ingredients in the food processor, toss with pasta and some roasted tomatoes, and dinner on the table. Bon Appétit!
