I really, really, really hope that while you’re looking at a photo of this pie, I’m eating one.
This peach and blueberry perfection tops the list of my favourite things to eat when I’m back home in Ontario in August. The recipe comes from an old cookbook of my mother’s, via a post on my former cooking blog, Kitchenist. My Mum has been making this pie for decades, and for years it was the only pie I’d eat, not being a fan of “cooked fruit” in general.
Firstly, the peach halves nestled in the open pie crust are beautiful to behold, and the blueberries are an optional, but lovely, addition. It also tastes amazing: summery, bright and not-too-sweet. In my humble opinion it makes the perfect summer dessert, though my Dad has been known to enjoy it for breakfast, too.
So strike while the iron’s hot and make this pie while peaches are still in season! I guarantee you won’t be disappointed.
